Premium Japanese sake is meant to be enjoyed either slightly chilled (suzu-bie) or gently warmed (nuru-kan). Lower quality sake is often served boiling hot to mask the unpleasant flavors, aromas, and rough texture of inexpensive, mass-produced sake.
Tozai Typhoon is a versatile premium sake that is delicious not only served chilled but also gently warmed as it is enjoyed during Japanese winters. Or substitute Typhoon for vodka or gin to give cocktails an Asian twist.

Produced in Kyoto's ancient brewing town of Fushimi, known for its abundant supply of pure, pristine, and soft water from many nearby mountains. The label image is a Japanese "koi" whose vibrant colors and shimmering scales have earned them the moniker "living jewels".
$19 TOZAI “ SNOW MAIDEN UNFILTERED” JUNMAI NIGORI
This is fairly thick and chewy nigori (cloudy sake), but it is still surprisingly dry. The aromas are bright and fresh and they show a lovely ricey and fruity combination. In the mouth, this sake has solid weight and gives the same flavors of fresh fruit and creamy fresh rice that your nose told you about. The finish has a pleasant astringency and is nicely mellow, beckoning you for another mouthful. You will rarely taste a classier nigori at this price, and this may be the ultimate food-friendly nigori.

Refined and fragrant with a mildly sweet aroma of barley. A well-balanced flavor with a caramel nuance that delicately fills the palate. Sweet barley carries the aroma throughout, and leaves a lingering fragrance of roasted grains. Mixing with hot water intensifies the sweetness and brings out its depth, creating harmony with the rich fragrance.
$ 42 KUROKI KIROKU- 20% RICE/80% SWEET POTATOES
Made from “Kogane Sengan” sweet potatoes grown in the distiller’s own field and from their own handcrafted black koji. Distilled at normal pressure then aged for three years in kame (large porcelain pots) which draws out a very strong, thick aroma aroma, mellow taste of sweet potato and black tea and a fragrant and complex finish. Mixing with room temperature water enriches the flavor, releasing the sweet, slightly roasted character of the potato. Mixing with hot water mellows the flavor and creates a well-balanced, rounded taste.
$39 WATANABE KURO-KOJI ASHAI-MANNEN
The stout body and deeply fragrant aftertaste are created by kuro (black) koji. This is another signature brand of which the richness is reputed among customers as rare in Miyazaki Prefecture from which most shochus are of the easy-to-drink variety.
